With just 4 ingredients these are super easy to make – perfect for when you’re feeling too tired to cook! You just need to have a good Food Processor on hand – (I use a Thermomix) and you can whizz them up in a few minutes.
Ingredients:
150g dried apricots
100g almond meal
150 shredded coconut
50g raw coconut oil
Method:
Blend the almond meal, shredded coconut and apricots in a food processor. Melt the coconut oil on low heat and slowly add the oil into the food processor until the mixture forms into a dough.
Roll the mixture into bite size balls then place into freezer for half an hour. Refrigerate until serve and enjoy!
